Composition

Pinot Noir 100%, from hillsides on clay-limestone soil, facing south.

Vinification

Skin maceration is the traditional method used to elaborate champagne Rosé de “Saignée” from Côte des Bar vineyard, and specially from our village Les Riceys. The Pinot Noir grappes macerate during 4 days to extract the black pigment from the skin and thus to obtain a champagne with a ruby hue and assertive aromas of red and black berries followed by a final note of liquorice on the palate. Maturation of 20 months in our cellar.

Tasting

Intense ruby hue. A nose that reminds strawberry and black cherry. A few notes of candied fruits with spiced shades. On the palate, liquorice notes, orange zest. We also find spiced notes of the nose
